RECIPE: Baked Feta Tomato Dip


  • 340g pack of BC Hot House cherry tomatoes
  • 1/3 cup chopped, pitted kalamata olives
  • 1 minced clove of garlic
  • 1/4 cup red onion(thinly sliced)
  • 2 tbsp fresh, finely chopped parsley
  • 1 tsp oregano
  • 1 tsp olive oil
  • black pepper
  • 10 oz  of feta
  • something to dip with; nacho chips, pita, cracker
Preheat the oven to 400°. Mix together the cherry tomatoes, olives, garlic, onion, oregano, olive oil, a pinch of pepper, and 1 tbsp of the parsley. Place feta pieces in an baking/casserole dish and pour tomato mixture on top. Bake for 15 min. Garnish with the remaining fresh parsley and serve immediately.
